Each Brazos Bagel is handmade to order in small batches, using only high-quality ingredients. Inspired by the handcrafted bagels of New York and Montreal, Brazos Bagels are boiled and baked. Every bagel is treated to a barley malt bath, giving it a slightly shiny glazed crust, and then oven-baked at a high temperature, maturing each bagel into a slightly chewy and tangy delight, perfect with cream cheese, jam, lox, on sandwiches or by itself!

We skip the storefront shuffle and focus on the craft, delivering bagels, housemade schmears, and Summer Lane Cold Brew right to you. No lines, no waiting, just honest food arriving where you are, ready to meet the morning on your terms.

Order Ahead and we’ll hit your doorstep like a crew on tour, carrying fresh bagels, bold schmears, and Summer Lane coffee in the back like our trusted gear. This outfit moves city to city, week after week, keeping the rhythm alive.

Wednesdays and Fridays we roll through Conroe and The Woodlands.
Thursdays and Saturdays we slide into the Heights, Montrose, Rice Village, and Memorial.
Sundays we change up the set: Kingwood every week, Humble on first Sundays, Huntsville on second Sundays, and a rotating third-Sunday stop you can catch on Hotplate.

Brazos Bagel started with Zac Wilson’s drive to make something true, something with a little soul under the surface. The dough stayed hand-rolled, the boil stayed true, and the work found its rhythm moving across Houston in two lanes at once: straight to people’s doorsteps and into the hands of small shops that wanted real craft on their shelves.

When Lindsey stepped in with Summer Lane Coffee, her cold brew and lattes brought a backbone that sharpened the whole operation. Together they built a model that feels less like a bakery and more like a band carving its own circuit. Early deliveries, wholesale drops, spreads and specials rolling out like new tracks from the same session.

Both sides feed the same flame. The menu travels with intention, the partnerships grow with care, and the whole thing carries a hint of rock and roll grit, as if the story knows exactly where it’s headed even while the next stage lights are still coming into view.
